Of all the new recipes I developed for the cookbook this has to be one of my favorites. I’m excited to share it with you as a sneak peek today. The contest in this article is over (Melyssa S. was the winner), but maybe you’d like to order a copy?

All over the Middle East and even in India, a kofta is a little meatball or patty. There are a few vegetarian versions too. These kouftikes de prasa as they are affectionately known on the Sephardic side of my family, are made of leeks, bound together with breadcrumbs and eggs.

I like to up the ante by serving them in a pita sandwich with a spicy pickled cabbage flavored with preserved lemon and harissa. This transforms them from an appetizer into an entrée with street food flair.

The cabbage needs to sit for a couple of hours to soften. You can toss it together the day before and let it marinate in the refrigerator overnight, or in a pinch, just use plain shredded lettuce instead, and serve hot sauce on the side.

Kouftikes De Prasa Sandwiches
Vegetarian and kosher
Serves 4 / 30 minutes active

For the spicy cabbage

  • 2 cups finely shredded red cabbage
  • ½ teaspoon Kosher salt
  • ¼ cup white vinegar
  • ½ preserved lemon, finely chopped
  • 2 teaspoons harissa or Thai-style chile sauce (such as Sriracha)

For the leek patties

  • 2 large leeks, white and light green parts only (about 12 ounces)
  • 2 tablespoons olive oil
  • 3/4 teaspoon salt
  • 4 large eggs, beaten
  • 1/2 cup homemade breadcrumbs (page 000)
  • ½ teaspoon cumin powder
  • ¼ teaspoon Aleppo pepper or cayenne
  • pinch cinnamon
  • vegetable oil for shallow frying
  • flaky sea salt

To finish the sandwiches

  • 4 pita breads, lightly toasted or grilled
  • 20 thin half-moons of cucumber
  • ½ cup thick Greek yogurt or labneh
  • sumac
  • handful mint (or cilantro) leaves, torn
  1. For the spicy cabbage: Thoroughly toss together all ingredients and refrigerate for at least two hours (the day before is fine too). Allow to return to room temperature before serving.
  2. For the leek patties: Cut the leeks in half lengthwise and then into ¼” half-circles. Wash in 3 changes of water and then dry thoroughly (a salad spinner works well for this).
  3. In a large skillet over medium high heat, heat the olive oil and saute the leeks until tender and starting to shrivel, about 5 minutes. (You can use the same skillet to fry the leek patties in a moment).
  4. Thoroughly mix the leeks, salt, eggs, breadcrumbs, cumin powder, Aleppo pepper or cayenne, and cinnamon.
  5. Put about 1/8” of vegetable oil in the skillet and set the heat to medium-high. Drop the batter in with a quarter-cup measure and use the back of the cup to smooth each patty into a circle about 4” in diameter. Make 8 patties total, which will require two batches. Fry each patty until golden brown, about 3 minutes per side. Remove to paper towels and season with the flaky sea salt.
  6. To finish the sandwiches: Place two leek patties on a pita. Top with a handful of the spicy red cabbage, 5 cucumber slices, and 2 tablespoons of the Greek yogurt. Sprinkle a little sumac on the yogurt, and scatter a few mint leaves over the whole sandwich. Serve immediately.

  1. I love koftas of all kinds and a kofta with leeks and eggs is very new to me. The cabbage looks so versatile- would be delicious in any wrap or sandwich.

  2. My farmers’ market opens this weekend and I was hoping for some spring leeks (although it’ll probably take three of those to equal one of yours). Now I’m REALLY hoping for them.

    Favorite weeknight veggie meal (for the contest!)… seasoned black beans, diced and sauteed bell peppers and onions, and spicy broccoli slaw, wrapped up in a taco shell. Yummy!

  5. I’m in the process of moving, so lately my favorite veggie meal is whatever is easiest. Going by the number of times I’ve eaten in the past couple weeks, a baked sweet potato with baked beans is my current favorite. Not exactly the most inspiring dinner…

  6. My favorite weeknight meal is any version of beans and greens. It is so easy to make, only requires one pot (if beans are pre-cooked), and is super versatile. I’ve thrown it inside a pizza roll, stuffed peppers, wraps, and my all time favorite – eaten it straight from the pan!

  7. Boring & predictable my go to is salad. I have also been on a kick where I make a batch of bean “taco” filling and use it in tacos, nachos, quesidillas, buritoes etc for a quick meal..

  8. I’ve never cooked leeks, but this looks like a great recipe for my first try. In our house we make black bean or black-eyed pea burgers, so this would make an interesting variation.

  10. One of my favorite week night vegetarian meals is wheat couscous with garbonzo beans, veggies, feta and a mustard-vinegar dressing. Quick, protein filled and lasts for lunches during the week too! Also love an easy stir-fry, sandwich and salad or quick pasta like tomato basil pasta.

  11. I love the colors, flavors and textures that come together in this! One of our fave veggie meals is a veggie burger: chipotle black bean patty with fresh guacamole, salsa and sour cream. Sometimes, we use veggie patties chopped up w/stir-fried veggies over rice to up the protein content, too.

  13. I’ve been pondering the delicious, lightly spicy pickled red cabbage that comes with my falafel recently. I can eat huge piles of it, but never really thought about making it until just now. I can’t wait!

    For a weeknight, I love poached eggs on top of things: sauteed greens with a poached egg on top and a dash of vinegar, an egg poached in spicy tomato sauce on a piece of thick toast, etc. So easy to scale up or down — just poach another egg!

My newest favorite meal is either a spicy bean soup using re-fried beans, black beans, Mexican spices and veggie broth or another new favorite is bean chalupas where I use re-fried beans, mixed with garlic, bell peppers, sauteed onions and hot enchilada sauce + Mexican spices on a crisp fried corn tortilla, with homemade guacamole, lettuce and tomatoes. YUM!

  17. These look great. You can’t go too wrong with leeks and oil. 🙂

    Current favorite basic dinner: a curried potato and cauliflower with nigella seeds prominent in the mix, a dal made in the pressure cooker with misc veggies, and (if I’m feeling adventurous) some curried okra as well. It’s not hard to have all three of these done in about a half-hour.

    But as Spring approaches, I think that your mango salad, some kind of tofu stir-fry, and baby zucchini/squash sliced lengthwise and fried in olive oil, finished with some lemon juice that can kind of caramelize on them…THAT might move to the head of the list.

  18. I love kofta, and Middle Eastern food in general, so I’m definitely going to try these leek ones.

    Pasta + veggie + cheese has always been my staple weeknight combination, but lately my husband has gone more low-carb, so I’m trying to find “flexitarian” options that I can eat with a pasta/rice/grain and he can eat with chicken or fish. Not to suck up or anything….but recently we’ve had your VERY addictive Sicilian cauliflower dish, with pasta for me and fish for my husband; and last night I made your coconut rice with stir-fried green beans, fresh mint, chile peppers, and fried shallots (he had chicken with the green beans).

  23. I’m going to try this out on my family the next time my sister comes to visit – she’s a vegetarian, while my husband and I are more flex-i-tarian. He loves gyros, she does not, so this seems like a good compromise.

    My favorite comfort food right now is asparagus. I like it roasted in a little olive oil with balsamic vinegar drizzled on it. And leftovers (ha!) made into cream of asparagus soup!

  25. My favorite fast vegetarian weeknight meal is a quinoa risotto! Quinoa is great because it never gets too mushy and cooks fairly quickly. Throw in loads of chopped up veggies and a little bit of goat cheese (if non-vegan), and it’s a healthy, high-protein meal in half an hour or so!

  27. Favourite weeknight meal would have to be this Vietnamese noodle dish that I make with lots of fresh herbs, roasted peanuts and egg quickly cooked with sesame oil.

    1. As for favourite weeknight vegetarian meals, it would have to be one of a hundred variations on slow cooker beans, served with rice or sopes. Cheap, delicious, easy, healthy and I can set it up before leaving the house in the morning, ready to eat the moment we get home.

  28. Mmmmm, this looks so good! I actually LOVE cabbage (one of the hazards of having a Hungarian mother, apparently), so this is totally something I’m going to have to try!

    My go-to vegetarian meal is probably a grilled portobello “burger” (marinated in oil, garlic, and balsamic vinegar) on a sandwich with fresh mozzarella and avocado. Delicious!

  29. The easiest, vegetarian meal that I tend to eat has to be a bowl of soba noodles. Along with some chopped kimchi, I’ll toss the noodles with a splash of kimchi juice, a bit of sugar, and a drizzle of sesame oil. If available, I’ll add some chopped tofu pieces and scallions. Yum and yum!

  31. My favourite weekday meal is omelettes with some fresh bread. It’s a quick and easy, yet nutritious, way to feel good after a day at work. It’s great that you can change up the ingredients each night! Since I work quite late, having a relatively lighter meal is nice as it doesn’t leave me feeling to full before going to bed.

  32. My favourite vegetarian week night food is Indian curry! The simmering spices and vegetables certainly helps me unwind after a busy day. It’s also great because you can put it in a tupperware for lunch the next day!

  36. As I have been a vegetarian for all of my life… I guess I have to figure out what my favorite food is, EVERYTHING! I have to say though, khichadi (mung beans & rice), roti & veggie curries, Sandwiches & Soups!

  37. My favorite week night meal is pasta with pesto. I blend basil, garlic, pine nuts, salt and Parmesan in the mini blender until crumbly and then top the pasta with the pesto mix and cherry tomatoes cut in half and then shave a bit more of the Parmesan on top. Good to Go!

  43. These remind me of my favorite Sephardic Passover dish: keftes de prasa. My family is from the Isle of Rhodes (first when it was occupied by Turkey and also later under Italian rule before WW2) and this was a particular favorite….never occurred to me to put it into a sandwich. Wow and thank you for a great idea.

    1. Yep, the exact same thing! Keftes, kouftikes, people just have idiosyncratic ways of calling them. We always have them at Passover as well (with matzoh flour of course).
